Recipe: Hummus & Greek feast night

Hummus:
Add all the following to your blender or small food processor
1 15oz can Garbanzo beans, drained and rinsed
3 Tablespoons plain Greek yogurt
3 Tablespoons extra virgin olive oil
Juice from half a lemon
2 teaspoons ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1 teaspoon chopped garlic
ground black pepper

Blend and add 1 1/2 to 3 Tablespoons of water as needed to achieve a thick dip consistency.
Chill. Garnish with parsley and paprika
Serve with pita bread, kalamata olives, roasted red peppers, red onion, cucumbers, and whatever else you can think of.



Dd and I have this for lunch all the time. When we have hummus for dinner, we make it a feast. Dh has Chicken with feta and spinach, recipe HERE


I have a Quorn breaded faux chicken and we all have couscous with zucchini, yellow squash, red onion, and red bell pepper.

  1. Thanks for sharing this! Hubby and I love Greek food (it's pretty much the only reason Greece is top on our travel list!) I haven't had couscous in so long--thanks for reminding me of its existence. It was a stable for me back in college along with ramen noodles :) Keep up all the awesome recipes...I'm loving this new blog!

  3. Thanks for the hummus recipe minus tahini, definitely one of those things that's easy, cheap and better to make your own instead of buying. As a "flexitarian" (seafood, don't rock the boat i.e. have to do BBQ events for work) living with a carnivore, interested in continued notes, a post about your experiences meat substitute products, good, bad, ugly.
